For the Eggplant
  1. Arrange slices on paper towels laid on a wire rack. Sprinkle with salt, cover with a sheet tray, and place a heavy can on top to weigh it down. After 10-15 minutes, place a griddle or skillet over medium-high heat . Brush slices on one side liberally with olive oil, and sprinkle with lemon pepper. Arrange slices in pan, and while they cook, brush the other side with oil and sprinkle with lemon pepper. Flip once the slices are golden and cooked, and pull them off when both sides look delicious.
Assemble the Sandwich
  1. On 1/2 of the pita, arrange ingredients in the following order: brie slices (2 or 3 should do it) greens eggplant blue cheese crumbles (a little goes a long way) more brie slices Fold the pita over, brush with olive oil, and return the whole sandwich to the griddle (or a sandwich press). Cook until bread is starting to brown and cheese is melting. Cut in half and enjoy!
